No-Bake Peanut Butter Power Bites

I have always had a slight obsession with peanut butter. Maybe it started with the peanut butter and marshmallow sandwiches my mom packed me for lunch or the fact that sometimes she’d encourage me to have a spoonful of peanut butter when I’d complain that I was starving. I slowly became a peanut butter snob, always on the hunt for the best. It had to be the all natural, no nonsense kind that took 5 minutes to stir when you opened it. I go back and forth between a crunchy and smooth obsessions, but I still eat peanut butter at least once a day in some form. Luckily, Elouise is a fan of peanut butter, which is why I threw together this simple recipe for Peanut Butter Power Bites. My current favorite peanut butter brand is Pic’s Peanut Butter, hands down. It’s all natural with only two ingredients, Australian high-oleic peanuts and salt. Plus their crunchy peanut butter is just on a whole other level.

These were so quick and easy to whip up, even Elouise could help. Plus the words no-bake in any recipe make my heart skip a beat. I also split this batch in half and made some with mini chocolate chips and some with chopped prunes. I bet you can’t guess which ones were for the lady who is five months pregnant (insert eye roll).


No Bake Peanut Butter Power Bites

Ingredients

  • 1/2 cup Pic’s Crunchy Peanut Butter
  • 1 cup dry old-fashioned oats
  • 2/3 cup toasted coconut
  • 1/2 cup chopped prunes (or mini chocolate chips)
  • 1/3 cup raw honey
  • 1/3 cup ground flax seed
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

Directions

Simply throw together all of the ingredients into a large bowl and stir until everything is thoroughly mixed. Cover and stick it in the fridge to chill for about 20 minutes. Roll them into balls, I make mine about an inch and Elouise’s a little bit smaller. They will keep for about a week in the fridge stored in an air tight container, but you can also freeze some if you don’t think you’ll eat them that fast. This recipe will make about 25 power bites.

    Oh my goodness, these power bites sound delicious! I’ve become a honey snob recently and I love making peanut butter honey toast with my all natural honey! I’m sure it would be even more delicious with natural peanut butter!

  3. I too have quite an obsession with peanut butter and have since I was a little girl. Pregnancy has brought out a new kind of obsession with us and we are flying through jars like crazy people.

    I’d say my most favorite way to eat peanut butter is on toast with cinnamon and honey.. But I also enjoy it straight off a spoon, fork, or knife.. Whatever is clean. ?
